Chef - HMP Dovegate Job Req ID: 86142 Posting Start Date: 11-Jun-2020 Location: Uttoxeter, Staffordshire, United Kingdom, ST14 8XR Contract Type: Full Time Job Description: Chef HMP Dovegate, Uttoxeter Salary: 23,283 (Permanent, Full-time, 40 Hrs) Here at Serco we are looking for an experienced Chef to join us at HMP Dovegate, Uttoxeter to work within the residential function. As part of your role, you will carry out catering and related services for prisoners and staff as directed by the Catering & Retail Manager & Senior Management. You will assist the Catering & Retail Manager and Chef Supervisor in the delivery of catering services to the whole establishment and comply with all relevant Health & Safety and Food Safety Regulations, legislation and guidelines. You will provide varied and healthy menus for residents to include special diets, special events and religious events whilst also keeping abreast of trends and developments in the catering industry such as menus and consumer tastes. Other key activities will include: * Supervising prisoners in the production of daily meals * Ensuring the security and food safety of all foodstuffs, equipment and infrastructure is maintained during delivery, storage and distribution within the kitchen area. * Recording and documenting all relevant paperwork to comply with food hygiene regulations, Health & Safety, HACCP and company policies. * Performing random quality checks on service points before, during and after mealtimes. * Providing training and supervision to prisoners. What you will need to do the role: In order to carry out this role successfully, you must have good interpersonal & communication skills as well as the ability to think quickly and react to different situations. You will have good, working experience in catering to a large operation (1000+) or a similar custodial environment and be physically capable of working a 10-hour shift. You will also have: * Literacy and Numeracy Level 2 or equivalent GCSE. * City & Guilds 706/1 & 2 or equivalent NVQ or similar in Food Preparation and Production * Food Safety Level 3 * Awareness of Hazard Analysis and Critical Control Point (HACCP) * Awareness of Allergen Control within Catering If you enjoy engaging with people and have strong interpersonal skills, this is a fantastic opportunity to work in a people-centred environment and ensure a positive experience as part of the rehabilitation of prisoners.
