Assistant Restaurant Manager The DoubleTree by Hilton London Excel is looking for an Assistant Restaurant Manager to join our Food and Beverage team. This role will be hands on supervision of service, assisting the Food and Beverage Manager and Assistant Food and Beverage Manager in the management of the Restaurant department and on accession the Bar department, ensuring standards of operation are adhered to at all times and service expectations are exceeded. The following are just some of the responsibilities of the job role: Manage the Restaurant team and on occasion the Bar team in the provision of food and beverage, following standards and procedures manual, and direction from Food and Beverage Manager. Prepare rotas to meet business needs, ensuring that staffing levels and cost are kept within budget and payroll expectations. Ensure the smooth running of the Restaurant on a daily basis, delegating where appropriate and implementing pre and post-shift briefings. Liaise with sales department to ensure all promotions are fully understood and implemented. Attend and positively contribute to weekly strategy meetings in line with hotel standards. Be responsible for F&B equipment within the department, reporting any defects using the maintenance reporting procedures. To maintain standards of performance documentation, including brand and company standards, to be used in training and as a daily reference for all team members. Ensure all waiters notes and pictorial food service plans, including allergen information, are implemented as training tools for departmental standard training. Handle all guest requests efficiently and professionally, following hotel and brand standards. Have a thorough knowledge of all food and beverage menus, using ‘waiters notes’ to improve knowledge and service. Ensure that all standards in the Restaurant area are met and that a high mark is achieved in the annual Hilton and/or any other internal/external audits and any issues that are highlighted are resolved immediately. Ensure that Restaurant SALT action plans are presented on the first working day of each month, to the team, ensuring their relevance. Apply the SMART system to achieve the monthly SALT targets as set and agreed with the Food and Beverage Manager. Continuously review areas of responsibility against brand and hotel standard operations procedures; produce, review and implement resulting action plans and departmental empowerment guidelines where necessary. Protect personal data of guests and team members following GDPR and PCI training. Have thorough knowledge of POS system and ensure that all orders are correctly inputted. Ensure high standard of cleanliness in Restaurant areas at all times. Actively seek ways to improve the Restaurant operation, agree and implement any resulting factors. Complete Duty Manager shifts as per rota and ensure that all areas are running as per Company and brand standards, identifying any shortfalls and implementing action plans to address shortfalls. Adhere to company rules on uniform and personal presentation standards.
