Sous Chef, New Opening Italian Restaurant, London, £35,000 plus benefits I am looking to recruit a proven Sous Chef to help launch this Modern Italian styled brasserie in Central London due to open in April 2020. Located in a very busy / food focused location this restaurant is geared up to cater for up to 700 covers per day. This is a unique chance to work with some of the industry’s best operators and be an integral part of this company’s success and future growth as they already have plans for additional openings with this concept. Pitched at the premium end of the casual dining market and o ffering a modern Italian brasserie style menu, this restaurant will serve only the freshest and seasonal ingredients and a s expected of an operation at this level, all food will be made fresh from scratch in house - everything from the Pasta - the Focaccia, meat prep and desserts. The Sous Chef they are looking for will be responsible for ensuring that the kitchen runs smoothly during busy service ensuring the high brand standards are adhered to at all time and to manage the team of circa 30 plus Chefs. You must have experience of working in premium branded high-volume restaurants serving high quality fresh food. You will also be proven multi-tasker and organised person. As Sous Chef, you will ensure that all processes are followed and delivered on Health & Safety and Food Hygiene at all times. You will be responsible for the BOH profitability by controlling stock levels and managing a consistent GP along with staff training and their future development. This is a hands on Sous Chef role, it requires someone who can work in a fast paced environment, and has experience dealing with high volumes of business within a structured organised operation. In return for your hard work they offer a basic salary up to £35,000 plus generous benefits.
