Head Chef and Sous Chef at Padella Shoreditch Our Story: Padella is all about making exceptional pasta available at an affordable price. Our first restaurant opened in Borough Market, London Bridge in 2016 and this year Padella No.2 has arrived in Shoreditch, Phipp Street. Padella is an award-winning restaurant owned by the Trullo duo; Jordan Frieda and Tim Siadatan. Trullo, their first ever restaurant will also be celebrating it’s 10th Birthday this year. Oh yes, we have a very exciting year ahead of us…. Our Ethos: We hand-roll over 700 portions of pasta everyday, serving fresh pasta dishes with traditionally made sauces using only the best seasonal British and European ingredients we can get our hands on. We cut no corners - whether it’s baking our own bread and tarts, churning our own ice cream or handling our ravioli. At the moment we’re looking for an experienced Head Chef and Sous Chef at Padella Shoreditch . You don’t need years of experience working with pasta or even have an Italian Nonna - we can teach you the skills. What we do need is someone with experience in a high-pressured, high-volume kitchen where you believe in the power of training so your team thrives. You understand the importance of working clean, keeping hygiene standards to a high-level and your attention to detail regarding the quality of food is exceptional. Requirements for Head Chef and Sous Chef Experienced. You ’ ve got to love cooking and thrive doing so in a fast-paced, high-volume environment with at least 1 year ’ s experience in a senior chef position (Sous Chef or Head Chef position). You have a natural interest in food and wine. You need to get excited about seasonal produce, where it’s from, the ethos behind the product and how it tastes. You get people. You have outstanding staff management, motivation and communication skills. You have a proven track record in developing and growing your team. You have a deep understanding of appraisals, the onboarding process and the importance of looking after staff. You remain calm in the eye of the storm. You ’ re resilient in the face of adverse situations, you can diffuse and solve situations promptly, taking control of the issue and supporting your team. Team Player.
