Head Chef, New Opening Italian Restaurant, London, £50,000 plus benefits I am looking to recruit a proven Head Chef to help launch this Modern Italian styled brasserie in Central London due to open in April 2020. Located in a very busy / food focused location this restaurant is geared up to cater for up to 700 covers per day. This is a unique chance to work with some of the industry’s best operators and be an integral part of this company’s success and future growth as they already have plans for additional openings with this concept. Pitched at the premium end of the casual dining market and o ffering a modern Italian brasserie style menu, this restaurant will serve only the freshest and seasonal ingredients and as expected of an operation at this level, all food will be made fresh from scratch in house - everything from the Pasta - the Focaccia, meat prep and desserts. The Head Chef they are looking for will be responsible for ensuring that the kitchen runs smoothly during busy service ensuring the high brand standards are adhered to at all time and to manage the team of circa 20 Chefs. You will be responsible for the BOH profitability by controlling stock levels and managing a consistent GP along with staff training and their future development. This is a hands on head Chef role, it requires someone who can work in a fast paced environment, and has experience dealing with high volumes of business within a structured organised operation.
