Job Description

We are delighted to be recruiting for a sous chef for our client's quality gastro pub near Grange over Sands, Cumbria. The site is part of a well-known regional pub company that operate throughout Yorkshire, Lancashire and Cumbria. This particular establishment is a high volume, all fresh food gastro pub with 7 individually styled rooms and cottages. The kitchen is well equipped for the busy services and currently has 5 chefs in the brigade. The main food offering is both modern and Traditional British cuisine which uses the best possible seasonal ingredients sourced as locally as possible. The position does come with the availability of accommodation for the role which is charged at a reasonable rate. The average working week is 5 days over 7 which equates to roughly 50 hours. The annual salary also has a weekly bonus structure and tips package available. Candidate Role: Assume overall charge of the operation in the head chefs absence including all food outlets within the site Liaise with the senior team to develop the business as a whole Ensure the kitchen is operating at a high level of food compliance and hygiene standards Minimise food wastage Work with the senior team to develop junior brigade members Co-create seasonally inspired menus Participate in daily food preparations and service Ability to train staff Computer skills Candidate Specification: Ideally have held sous chef position previously. However, a strong junior sous may be considered for the role Excellent management skills essential Be able to clearly communicate with a large team Be able to accurately cost menus and labour percentages Have confidence dealing with the environmental health office Ideally have experience in multi-venue sites Be passionate about creating fantastic and consistent quality food Eye for quality Attention to detail The Employer: .
