Job Responsibilities & Requirements As Pastry Chef de Partie you will be preparing top class cuisine/dishes using fresh local ingredients. Assisting the Executive Chef and Sous Chef to oversee the brasserie kitchen, as well the banqueting, and other outlets, to include freshness of ingredients, mis en place is ready for service. (You will also have the opportunity to take part in the 3AA Rosette operations, although not be focused in that area) In this role you will be a part of a 30 size team and encouraged to be creative, allowing you to really enjoy your daily work, working collectively to ensure the highest standards are always achieved The ideal Chef de Partie will: Assist the Executive Chef in retaining the 5 Red Star Standards Assist the Executive Chef, Sous Chefs in overseeing the Kitchen to include freshness of ingredients, mis en place, and that it is ready for service Ensure that the Kitchen is clean and meets safety standards To train Demis and Commis Chefs. Follow HACCP and Health and Safety procedures To occasionally assist in the other kitchen areas within.
