Home to Chapel Down’s award-winning sparkling wines and Curious Brew, The Swan frequently hosts wine tastings, and guided tours of the vineyard and winery. It’s the perfect place to experience the finest locally and regionally-sourced produce, in an elegant, relaxed and informal environment. With two AA Rosettes and a Bib Gourmand, this restaurant strives for excellence in every avenue, making it perfect for ambitious and dedicated people, ready for a challenge. The successful Sous Chef will undertake the following duties: Supporting the head chef in the general running of the kitchen. Onboarding potential new employees. Collaborating with the head chef to create menus. Working within specified budgets. Ensuring the kitchen meets high standards of quality. Completing food hygiene documents to comply with the law and writing environmental health reports when necessary. Establishing strong relationships with staff in other areas of the business, including managers and front of house teams. Communicating with front of house staff. Ordering supplies and negotiating with suppliers where necessary. Managing inventory and keeping control of stock. Organising produce and ensuring strict adherence to food hygiene regulations. Supervising all food preparation. Maintaining an organised and clean kitchen. As a Sous Chef you'll work across all areas of the kitchen and have the ability to confidently manage the kitchen in the Head Chef’s absence. Ideal candidate Helpful and friendly. Team and customer focussed with great communication skills. Enthusiastic with a willingness to learn. A team player but also have the ability to work on your own initiative. Able to follow guidelines and remain calm under pressure.
