Role We are looking for an experienced Head Chef to join our new and exciting Japanese Restaurant. The Head Chef has the overall responsibility for managing and leading the kitchen team, food quality, cost and profit margins. They will take charge of the smooth running of the kitchen with full operational responsibilities. The head chef will ensure they are performing to their highest potential in all aspects of their job and are adhering to Company standards, policies and procedures and statutory requirements. We expect you to lead by example and developing and motivating the team to work to the highest possible standard. The Head Chef will be passionate about food, have great organisational skills and be able to work under a fast pace environment. Responsibilities Ensuring high levels of Food and Health & Safety are maintained at all times. Identify and rectify any Food Hygiene and Health & Safety issues to ensure the welfare of both staff and guests. Address and report any complaints, accidents, incidents or other irregularities to GM Accountable for shift and daily temperature records (HACCP) and food labelling adherence in the unit Full accountability for consistency of food quality, presentation, portion control, storage and stock rotation Excellent product knowledge and service skills to achieve quality control during service at all times Has worked and understands all aspects of the sections Ensuring stock checks are completed at regular intervals with good levels of stock rotation, management and control Ensure equipment is used and maintained in line with completed risk assessment and report any issues to the General Manager Responsible for a high standard of cleanliness and organisation of all food areas and equipment Ensure cleaning rotas are adhered to and records kept Staff Management including shift planning, updating relevant systems, recruitment, training and development Managing the performance of the team through ongoing evaluations, listening, training and mentoring To be responsible for the actions and discipline of all staff in the line of command in liaison with HR and GM as required. Understanding reports regarding cost control and expenditure alongside revenue Maintaining food costs, wastage and labour control Work closely with the General Manager to ensure the appropriate standards are being meet Essential Skills & Requirements A minimum of 5 year’s experience in a similar role within the restaurant industry, preferably Japanese cuisine. A strong understanding of Japanese cuisine and culture. A strong understanding of Food, Health & Safety including COSHH and HACCP You must have strong communication skills with the ability to communicate with people at all levels and effectively coach and development your team Experience of managing a large kitchen brigade Works well in a pressurised and busy environment Outstanding problem solving and organisational skill Hardworking, self-motivated and dedicated about the position A good understanding of budgeting, forecasting and labour control Good working knowledge of general computer systems Effective time management skills and the ability to multitask Attention to detail This job was originally posted as www.caterer.com/job/89826252
