Overview

JOB DESCRIPTION : To oversee the efficient running of the Bakery area. To be responsible, accountable & comply with all production related activities, food safety, quality, H&S, good manufacturing practices and housekeeping at all times. Must have previous bakery experience DUTIES & TASKS: Allocate production sheets in priority order to each area ensuring they are in line with the agreed delivery schedule. Ensure all production orders are completed in full within the agreed timeframe. Ensure allocation of staff/resource is carried out efficiently. To constantly review training of staff to encourage flexibility & job rotation. Ensure all required documentation is filled in correctly. Ensure all departmental procedures are being adhered to at all times by each member of the Bakery team. Communicate & liaise with Decorating Supervisor & Packing Supervisor to ensure efficient work flow. Ensure all products being baked are correct to the quality specifications required. Constantly review operation efficiencies ensuring downtime is kept to a minimum with a view to improve wherever possible. Monitor and control all ingredient stock levels ensuring traceability and use by dates are being adhered to. Ensure all CCP’s are adhered to and any food safety issues are raised immediately with the Production Manager& Technical Manager. GMP (good manufacturing practices) standards are adhered to at all times. Ensure a "Clean as You Go" mentality is instilled within your team around housekeeping. Ensure any Health & Safety issues are raised immediately to your Production Manager. Demonstrate a positive can do attitude with a mindset of continuous improvement. Demonstrate a strong work ethic. Demonstrate good verbal & written skills along with listening to your colleagues & peers.
